French Onion Stuffed Mushrooms...or YUM.

So, I recently had a Mom's Night In at my house and was looking for some easy yummy recipes and came across this one from The Pioneer Woman.   Seriously, what does this woman do that isn't fabulous?

Everyone seemed to love them and the hardest part was finding the Gruyere cheese.  My disclaimer is that I was making these and entertaining three kids so there are some steps I forgot to photograph.   Just go check out TPW if you need pictures to follow.



Ingredients needed:

  • 2 Tablespoons Butter (1 for onion mixture, and 1 for mushroom caps)
  • 2 whole Large Onions, Halved And Sliced Thin
  • 1/4 cup Beef Broth
  • 7 dashes Worcestershire Sauce
  • Splash Of Red Or White Wine
  • 1/2 cup Grated Gruyere Cheese (can Use Swiss)
  • Kosher Salt
  • 24 whole White Or Crimini Mushrooms, Washed And Stems Removed
  • Minced Parsley

Melting butter to put onions in...and I also added the chopped stems that I had removed from the mushrooms just for some added Umph to the stuffing mixture.   

I grated up the Gruyere cheese while I was letting the onion mixture cook up.

My lightly cleaned and "de-stemmed" mushroom caps.

The yummy smell coming from the mushroom stem and onion mixture was heavenly.  This is also where the wine, worcestershire  and beef broth come into play.   Cook for 5 minutes or until liquid is cooked down.

Very lightly (only a couple of minutes) cook up the mushroom caps in a skilled.   I obviously needed a bigger skillet.

Stuff mushroom caps with the onion mixture.   I was generous.  And bake at 325 degrees for 10 minutes.   Put the broiler on for a minute or two to get that nice bubbly, brown cheese on top.


Top stuffed mushrooms with shredded Gruyere cheese.  I apparently forgot about this picture until I had put them in the oven already.  And that would conclude the picture portion of this post----I forgot the most important picture...the finished product.   Just imagine that this babies came out with a golden bubbly cheesy top.   And top with chopped parsley as a finish.  Yumm-O!
